The Nautilus Maldives has announced the return of Executive Chef Kengo Tomita, marking a new chapter for the resort’s renowned Unscripted Dining concept.

Bringing more than 30 years of international culinary experience, Chef Kengo returns to the ultra-luxury private island with a philosophy centred on freedom, creativity, and deeply personalised dining experiences.

His appointment reinforces The Nautilus’ commitment to intuitive hospitality, where every meal is designed around individual preferences rather than fixed schedules or traditional restaurant rules.

A Global Culinary Career

Chef Kengo has built an impressive international career across Japan, Spain, Dubai, Thailand, Fiji, Moscow, the Philippines and the Maldives.

His experience includes Michelin-starred restaurants as well as leadership roles with renowned luxury hospitality brands including Aman, Six Senses, Ritz-Carlton, Madinat Jumeirah and Soneva. He also previously served at The Nautilus, where he helped shape the resort’s culinary identity.

Most recently, Chef Kengo was Executive Chef at Amanpulo in the Philippines, where he led the culinary programme for the private island resort and curated bespoke dining experiences, including the Japon Iberico Culinary Weekend.

Dining Without Rules

At the heart of The Nautilus experience is its Unscripted Dining philosophy, which removes many of the conventions associated with traditional luxury resort dining.

Rather than fixed mealtimes or restaurant closing hours, guests are free to dine whenever and wherever they choose. Menus are flexible, with chefs working directly with guests to create personalised dishes inspired by individual preferences, moods or spontaneous requests. The kitchen remains open throughout the day, allowing every dining experience to be tailored to the moment.

Chef Kengo’s culinary style—built around simplicity, balance and flavour with Mediterranean influences—naturally complements this approach, focusing on intuitive cooking rather than predetermined menus.

A Natural Return to The Nautilus

According to General Manager Philippe Cavory, Chef Kengo’s familiarity with the resort makes his return particularly meaningful.

Having previously contributed to The Nautilus’ culinary direction, he understands the personalised approach that defines the guest experience. His combination of refined technique with spontaneous creativity reflects the island’s philosophy of creating memorable moments tailored to each individual guest.

With Chef Kengo leading the culinary team once again, The Nautilus continues to strengthen its reputation as one of the Maldives’ most distinctive luxury dining destinations.
