Conrad Maldives Rangali Island will welcome three Michelin-starred chefs for its Michelin Master Series 2026, running from 19 October to 7 December 2026.

Across three individual residencies, Theodor Falser, Simon Hulstone and Gabriela Filca will present 12 culinary experiences, including undersea tasting menus, beachfront dinners, wine pairings, a Champagne cruise and an interactive masterclass.

Theodor Falser | 19–24 October 2026

The Conrad Maldives Michelin Master Series 2026 begins with Theodor Falser, the chef behind Michelin-starred Johannesstube in South Tyrol. Falser took over the restaurant in 2014 and earned its Michelin star within his first year.

His “Taste Nature” philosophy draws inspiration from the Dolomites, with a focus on seasonal ingredients, regional produce and a close connection between cuisine and its natural surroundings.

His Maldives residency will begin with a Sunset Soirée before moving into a seven-course dinner at Ithaa Undersea Restaurant, located five metres beneath the Indian Ocean.

Guests can also join Falser for a Champagne cruise aboard the Majesty Yacht, while his programme includes a five-course beachfront dinner featuring Maldivian lobster paired with Ruinart Champagne.

Simon Hulstone | 16–21 November 2026

British chef Simon Hulstone arrives at Conrad Maldives from 16–21 November, bringing more than three decades of culinary experience.

Chef-proprietor of The Elephant in Torquay, which has held a Michelin star for more than 20 consecutive years, Hulstone is a Roux Scholar, former UK National Chef of the Year and two-time Great Britain representative at the Bocuse d’Or. His approach also places a strong emphasis on sustainable sourcing, supported by his restaurant’s 90-acre farm and regional producers.

Following his Sunset Soirée, Hulstone will present a seven-course dinner at Ithaa and a five-course dinner with wine pairings in the resort’s Wine Cellar. Located two metres underground, the cellar houses 18,000 bottles across up to 800 labels. His programme also includes a five-course beachfront dinner overlooking the Indian Ocean.

Gabriela Filca | 1–7 December 2026

The series concludes with Gabriela Filca, Chef de Cuisine at Nebo Restaurant & Lounge at Hilton Rijeka Costabella Beach Resort & Spa.

At just 23, Filca became one of the youngest women to lead a Michelin-starred kitchen, with Nebo retaining its Michelin star under her leadership. She has also been named Gault&Millau’s Great Chef of Tomorrow and received Croatia’s Michelin Young Chef Award.

From 1–7 December, guests can discover Filca’s contemporary approach through a Sunset Soirée and tasting menu at Ithaa, followed by a four-course beachfront dinner featuring Maldivian lobster. Her residency will also include an interactive culinary masterclass, offering a closer look at the modern techniques and creative process behind her cuisine.

Destination Dining at Conrad Maldives Rangali Island

Dining has long been an important part of the experience at Conrad Maldives Rangali Island, and the Michelin Master Series makes use of some of the resort’s most distinctive culinary settings.

The best known is Ithaa Undersea Restaurant, the world’s first undersea restaurant, positioned five metres below the surface and seating just 14 guests with panoramic views of the surrounding marine environment.

Beyond Ithaa, the 2026 programme moves between the resort’s underground Wine Cellar, beachfront settings and the open water aboard the Majesty Yacht. By pairing each visiting chef with a different setting, the series goes beyond the traditional restaurant residency and makes the location itself part of the culinary experience.
